French tarragon has a spicy aniseed flavor. Tarragon is used to flavor vinegar and mustard and to season pickled cucumbers, poultry, rice or cooked fish as well as in the production of sauces and marinades. The term tarragon comes from the Latin word draco, which means dragon or snake. It was once believed that the leaves would heal bites from poisonous snakes.

USE
Both the leaves of the tarragon and the shoot tips are harvested. The aroma becomes more intense during cooking. Use French tarragon in moderation, but always fresh, as it loses much of its aroma when dried. Tarragon is an important ingredient in Béarnaise sauce. Tarragon can also be used to make a very tasty white wine vinegar.
CARE
Tarragon prefers humus-rich, moist soil. Seed-resistant variety.
